No Bake Vegan Protein Bars that are simple to make, gluten free & bloody delicious you say?
I have been playing around with my no bake hemp seed recipes for a while now, and every time it seems to change. Depending on what I have in my cupboard that I need to use up. In these Vegan Protein Bars I have used oats, quinoa flakes, LSA, hazelnut meal etc etc and all have worked just as well as the other.
I always love to keep a good slab of these Vegan Protein Bars in my freezer for an in between snack when I am stuck in the home office.
Hemp Seeds are technically a nut (yup), and they are high in protein, good fats and omegas. Hemp seeds will not get you high, but they will heighten your meals to a new level. I love using hemp seeds in such a variety of things from my snitzel crumbs, salad toppers, smoothies and the list goes on.
Not only is this recipe super nutritious, it is SO easy to make!
Packed full of protein and good fats, this little treat will leave you feeling super satisfied and reaching for another.

For those of you that are new to Krumbled, I would like to get something out of the way first, I love hemp products.
I take CBD daily (I have for a few years) and I most likely will find a way to get hemp protein or seeds into my meals on a daily basis.

My No Bake, Gluten Free, Hemp Seed Vegan Protein Bars
Base
2 tablespoons tahini
2 tablespoons maple syrup or rice malt syrup
1 tablespoon organic vanilla extract
2 tablespoons coconut oil
1 heaped tablespoon nut butter (I used macadamia – can omit for almond, peanut etc)
2 heaped tablespoons hemp seeds
2-3 heaped tablespoons almond meal / LSA
2-3 heaped tablespoons shredded coconut
1 teaspoon cinnamon
Choc Topping
1 tablespoon cacao
1 tablespoon coconut oil (melted)
½ teaspoon Natvia
Instructions:
- In a large bowl, pop all of the ingredients in. You want a nice thick sort of consistency, but you still want to be able to easy mix it, if it doesn’t all come together like a slightly soft cookie batter, pop some water in to loosen it up.
- Line a glass tray with baking paper, and pour the mixture in. Pop in the freezer for an hour.
- In a small bowl mix the coconut oil, cacao and natvia together and then pour over the mixture and pop back in the freezer until set. (You can also use melted dark chocolate, however I have kept this super simple – and it sort of reminds me of the chocolate crackle topping with the cacao and oil combo!)
Keep in freezer!

Just made these!! So yum – the perfect snack!! I left off the topping so I could wrap them up in baking paper and put them in my kiddies lunch box! Also left out the nut butter and put sunflower seed butter instead to make them nut free. Yum!

How many bars does this make?

It normally makes 10-12 depending on how big you cut the bar.
