This Adaptogen Roasted Cauliflower & Turmeric Soup is perfect for those cold winter nights when all you want is that warm nourishing bowl of goodness.
Winter has well and truly hit Sydney, which means we all could use the extra hand in boosting our immune systems to help fight off getting run down during the colder months! My Adaptogen Roasted Cauliflower & Turmeric Soup is loaded with nourishing warming ingredients like turmeric, ginger, roasted cauliflower, garlic and with the addition of adaptogens.
Adding the adaptogens can be omitted if you don’t have them lying around at home. However if you haven’t already, I highly recommend taking a deeper look into the power of adaptogens. I have added in things like lions mane, chaga & ashwagandha to increase brain function and to boost your immune system. So if you are someone who suffers from brain fog or a low immune system, it might be worth you looking at adding these into some of your daily practices.
This recipe has been inspired by the divine Alison Wu (from WuHaus) with her Adaptogen Immune Boosting Cauliflower soup (click here) , I have made my own tweaks to her recipe and added in the adaptogens that I love to cook with. The end result was my very own version of an Adaptogen Roasted Cauliflower & Turmeric Soup.
A powerhouse of immune boosting ingredients:
Turmeric: Ground Turmeric is a staple in my pantry, I love using the Natures Way ground turmeric! I do also love to use fresh turmeric too – I find using both gives two different types of flavour profiles! Curcumin is the primary active ingredient in turmeric, which contains powerful anti-inflammatory & anti-bacterial properties (1), so whenever I feel like my immune system needs a bit of a helping hand, turmeric is one of my go-to ingredients.
Ginger: Ginger is another ingredient that I turn to for so many different reasons, from nausea, period pain to combat a cold. Packed full of vitamins, minerals along with a very special compound called gingerol which is a potent antioxidant 2 . Not only is it great to help boost your immune system, studies have shown that ginger can be an effective way to help brain function in women 3
Ashwagandha: (also known as the Indian Ginseng) is a superstar when it comes to adaptogen herbs. Ashwagandha has quite frankly has helped radically reduce my adrenal fatigue & anxiety with studies showing its potent effects4 Ashwagandha is also renowned for its vital role in boosting your immune system.
Chaga: Chaga comes with a warning attached to it, please use sparingly as the taste is quite potent! When used correctly, chaga has been shown to reduce harmful inflammation within the body 5
Lions Mane: Lions Mane was the first ever medicinal mushroom I introduced into my daily practice a few years ago when I was diagnosed with epilepsy. I struggled with my memory and brain fog and was recommended to me on the off chance that it might help. Lions Mane has incredible brain function properties, and studies have shown that it can help with memory retention6 and reduce inflammation in your body7
Adaptogen Roasted Cauliflower & Turmeric Soup
1 whole garlic bulb head
1 1/2 teaspoons ghee
1 large brown onion, roughly chopped
1 knob ginger fresh, peeled and roughly chopped
1 knob turmeric fresh, peeled and roughly chopped
1 can organic coconut cream
2 cups filtered water
1 cups bone broth (or veggie broth if vegetarian)
1 tablespoon ground turmeric (I love the Nature’s Way Powder)
¼ cup nutritional yeast
½ teaspoon chaga
1 teaspoon ashwagandha powder
1 tablespoon lions mane
Salt and pepper
- Preheat your oven to 200°C fan forced. Line your tray with baking paper and drizzle the olive oil/coconut oil over the cauliflower florets and then pop the garlic bulb in the centre. Roast until golden (approx. 25-35 mins – turn over once midway)
- Over a low heat, heat the ghee in a pan or a pot, slowly sauté the onion, turmeric & ginger for approximately 15 minutes. Add the roasted cauliflower and squeeze the garlic out of the bulbs. Saute for another 5 minutes.
- In a blender pop in the cooked mixture, along with 1 can coconut milk, 2 cups filtered water & bone/veggie broth & nutritional yeast. Blitz until creamy. Season to taste.
- Transfer back to your pot, slowly stir in the adaptogens & ground turmeric, and simmer until your desired consistency.
- Garnish with your favourite toppings (I love how Alison Wu has used radishes! So I have added in radishes, watercress, broccoli micro herbs and nigella seeds)
NOTE: If you do not have these adaptogens on hand, it is ok! I assure you that this soup tastes just as delicious without!
